Toshikoshi soba is believed to cut away bad luck. There are customary differences depending on the area or family traditions. It is a soup with soy sauce or miso based broth and mainly consists of rice cakes and other ingredients like taro, carrots, etc. This soup is eaten on New Year&#8217;s Day along with a traditional new year dish called Osechi, an assortment of colorful dishes packed together in special boxes. Each region has different zoni and the ingredients used are unique to each area. In the Kansai region, we usually have round mochi rice cakes. It is believed that round mochi is a symbol for family happiness and long life due to its stretchability. Taro symbolizes prosperity of descendants and carrots have the effect of warding off evil. People used to give meaning to each ingredient in their ozoni in the past.&nbsp;<\/p>\n\n\n\n<p>Normally we use white miso for Zoni, however sometimes I also use Miso with Malted Rice(\u7c73\u9eb4\u307f\u305d) for the Zoni.&nbsp;Let&#8217;s try making traditional Zoni soup with Yamsan&#8217;s Miso and Dashi in the coming new year! <\/p>\n\n\n\n<figure class=\"wp-block-image
